Remember Moon struck when Rose made “Eggs in a Nest” for Loretta…. Did your mom or grandmom every make this for you?

I remember especially on Saturday mornings ….. I don’t know why but it always felt special when Mom served these for breakfast. Just a piece of toasted bread with a hole in it but for some reason it just seemed like a real treat. Even today when we make it at home for adults you kind of get the same feeling. 

So take a moment, read the Recipe and then watch the very cute video on the next page by Helen Cavallo as she explains the simple way that it’s done and then surprise your kids or grand-kids the next time they’re over.

Eggs in a Nest

Ingredients 

  • 4 Slices of Bread – Bread of your choice

  • Normal glass to make the nest

  • 2 Table Spoons of Olive Oil

  • 4 Fresh Eggs

  • 1/4 Teaspoon of Kosher Salt

  • 1/8 Teaspoon of black Pepper – (Optional)

  • 1 Teaspoon of Cheese (whatever you like) 

  • Juice of 1/2 lemon

  • 1 Cup of Fresh Spinach

 

Helen’s Written Recipe

  • Wash and cut the mushrooms into quarters then add olive oil into saute’ pan over medium heat. Saute’ the mushrooms until golden brown, add salt and pepper then set aside. 

  • Using a glass, cut out a circle in the center of each slice of bread. Drizzle olive oil in a seperate saute’ pan. Then place over medium heat. Put the bread slices and the cut out circles in a pan then toast them on each side until lightly brown, remove each and set aside. 

  • In the toasted bread remaining in the saute’ pan, crack an egg into the center of the hole in the bread, cook it for about 1 – 2 minutes then place pan under broiler. If adding cheese let it melt while under the broiler. Cook until whites have set to your liking or for about 1 – 2 minutes. 

  • For the Kids: Place Eggs in a Nest on a Plate, drizzle some Olive Oil and add Toasted Circle slightly askew over the egg. 
  • For the Parents Plate your eggs the same way but add mushrooms and fresh spinach around the nest. Garnish with some Lemon Juice and Olive Oil
