Original Sicilian recipe  –  Pasta alla Norma

Ingredients for 4 portions are:

600 grams of eggplant 
one kilo of ripe tomatoes 
a bunch of basil
2 cloves of garlic 
80 grams of salted ricotta 
4 spoons of extra virgin olive oil 
some extra oil to fry the eggplants 
360 grams of pasta
