CAPRESE STYLE CHICKEN WITH BEANS

 

INGREDIENTS

Serves 4

  • 4 Tbsp. Olive Oil

  • 8 Boneless skinless chicken thighs

  • 2 Cloves Fresh Garlic finely chopped

  • 10 Campari Tomatoes – quartered

  • 3 Tbsp. chopped fresh Basil

  • 2/3 Cup Dry White Wine

  • Salt and Pepper to taste

  • 1 Can (approx. 15.5 oz.) Cannellini Beans – drained

  • 8 oz. Fresh Mozzarella slices or Ciliegine (little balls of fresh Mozzarella) – as pictured

  • More Fresh Basil

  • Balsamic Glaze (optional)

INSTRUCTIONS

  1. Season the chicken with salt and peper – both sides and brown in the oil along with the garlic in an oven proof pan.

  2. Add the tomatoes, basil and wine. Cook about 15 minutes uncovered at a strong simmer.

  3. Add Mozzarella and beans.

  4. Place pan in oven and cook at 350 degrees for 10-15 minutes or until cheese is melted.

  5. Garnish with fresh Basil.

  6. Drizzle with Balsamic Glaze (optional but adds to the flavor!) and serve.
