Creamed Spinach

INGREDIENTS

  • 2 pounds of fresh baby spinach

  • 1 onion, finely chopped

  • 2 cloves of garlic, chopped

  • 4 Tbls of butter

  • 1/4 cup of all purpose flour

  • 1 cup of heavy whipping cream

  • 4oz. of cream cheese

  • 1/2 tsp of salt

  • 1/2 tsp of fresh ground black pepper

  • 1/4 cup of fresh grated Parmesan cheese

PREPARATION

  1. Wash and trim the spinach

  2. Place the wet spinach in a large skillet and sauté until wilted.

  3. Remove the spinach from the skillet, drain and cool.

  4. Chop the spinach with a large knife.

  5. Sauté the onions and garlic in the butter until tender.

  6. Stir in flour until smooth.

  7. Slowly stir in cream.

  8. Season with salt and pepper.

  9. Fold in spinach until well mixed.

  10. Stir in Parmesan cheese.

  11. Place in a serving bowl and serve
