Crisp battered sage leaves
Battering and frying sage leaves is absolutely delicious – you can’t make too many of these!

2/3 cup (100g) self-raising flour

5 oz(150ml) beer (lager)

Olive oil, to shallow-fry

24 large sage leaves (from 2 bunches)
Method

1.Whisk flour, lager and some freshly ground pepper together in a large bowl. Heat about a inch deep of oil in a deep frying pan over medium heat (a cube of bread will turn golden in 15 seconds when the oil is hot enough).

2.In batches, coat the sage leaves in the batter, shaking off any excess, then fry for 1 minute each side or until golden and crisp. Drain well on paper towel, then season with salt and serve immediately.
