CURCURIGHEDDU – ZUCCHINI FRITTELLE

INGREDIENTS:
- 
4 zucchini,
- 
½ cup of chickpea flour,
- 
1 sachet of San Gavino Monreale saffron,
- 
Salt to taste,
- 
Extra virgin olive oil
PREPARATION:
- 
Clean the zucchini and cut them into flakes with the appropriate tool or with the grater with large holes.
- 
Mix them with a batter made with half a cup of chickpea flour and water with a little salt and saffron.
- 
Pour the mixture by spoonfuls into the boiling oil; cook the fritters on both sides, let them dry on absorbent paper and serve hot.
