CURCURIGHEDDU – ZUCCHINI FRITTELLE

INGREDIENTS:

  • 4 zucchini,

  • ½ cup of chickpea flour,

  • 1 sachet of San Gavino Monreale saffron,

  • Salt to taste,

  • Extra virgin olive oil

PREPARATION:

  1. Clean the zucchini and cut them into flakes with the appropriate tool or with the grater with large holes.

  2. Mix them with a batter made with half a cup of chickpea flour and water with a little salt and saffron.

  3.  Pour the mixture by spoonfuls into the boiling oil; cook the fritters on both sides, let them dry on absorbent paper and serve hot.
