Deep Fried Pasta Snack: Crunchy Paccheri with Stracchino and Porcini

The stuffing obviously lends itself to endless variations, but today we wanto to suggest you a Stracchino cheese and porcini mushrooms stuffing for this crispy pasta snack. Aboslutely delicious!
Try this delicious fried paccheri for a party, they are great to be served as finger food. Children will love them! If you are having a party at home, prepare them before, andd just fry them before serving. For a healthier version, bake in oven for 20 minutes.
Instructions

Cook the paccheri in a large pot with salted boiling water.

In the meantime place the mushrooms in a bowl and cover with hot water. Let soak 15 to 30 minutes, until thoroughly soft.

Drain the pasta al dente. Be careful not to break the paccheri while cooking or draining them. Let them cool.

In a bowl, mix together the Stracchino, the Parmesan, salt and pepper. Put a clove of garlic in a pan with a little oil and cook untile it gets gold.

Cut the mushrooms and gently squeeze them. Then sauté the mushrooms in the pan for a few minutes.

Remove the garlic and blend the mushrooms with a mixer. Then add them to the ricotta and mix well.

Transfer the cream into a sac-à-poche. Then fill the paccheri delicately.

Tap the paccheri first in the flour, then in the egg and finally in the breadcrumbs, being careful to also cover the short sides.

Then fry them in a pan with oil hot, a couple of minutes per side, until full browning. Serve immediately.
