Fried Bell Peppers and Potatoes
Calabrese-Style Fried Potatoes with Peppers
Ingredients
Servings 4 people

2 big or 4 medium red bell pepper, seed and cut bell peppers into thin strips.

2 big potatoes or 3 medium, very thinly sliced

1 medium onion sliced

3 tbsp extra virgin olive oil

4 cloves garlic, thinly sliced

Finely chopped fresh parsley

Salt to taste
Instructions

Put the extra virgin olive oil and garlic in a frying pan and fry the potatoes on a low flame until almost cooked. Remove and keep aside.

In the same frying pan, fry the bell peppers on a low flame until almost cooked.

Add the fried potatoes and sliced onions, season with salt to taste, and fry well until cooked through and golden brown.

Garnish to taste with parsley

Serve warm
