Hot Canapes with Mozzarella
(Canape Caldi con Mozzarella)
Ingredients:

8 small buffalo milk mozzarella cheeses, halved

4 salted anchovies, cleaned and filleted

4 white bread slices, crusts removed

2 tomatoes, sliced

Fresh flat-leaf parsley, chopped, to garnish
Directions:

Preheat the oven to 220°C (425°F) Gas Mark 7.

Cut the slices of bread in half.

Place half a mozzarella cheese and an anchovy fillet on each.

Arrange the tomato slices all round.

Place the canapes on a baking sheet and bake for just a few minutes until the mozzarella has melted.

Sprinkle with parsley and serve. Serves 4.
