Hot Canapes with Mozzarella

Hot Canapes with Mozzarella
(Canape Caldi con Mozzarella)

Ingredients:

  • 8 small buffalo milk mozzarella cheeses, halved

  • 4 salted anchovies, cleaned and filleted

  • 4 white bread slices, crusts removed

  • 2 tomatoes, sliced

  • Fresh flat-leaf parsley, chopped, to garnish

Directions:

  1. Preheat the oven to 220°C (425°F) Gas Mark 7.

  2. Cut the slices of bread in half.

  3. Place half a mozzarella cheese and an anchovy fillet on each.

  4. Arrange the tomato slices all round.

  5. Place the canapes on a baking sheet and bake for just a few minutes until the mozzarella has melted.

  6. Sprinkle with parsley and serve. Serves 4.
