Ingredients:

1 large Vidalia or other sweet onion, sliced into rings

1 large egg

1 cup milk (2% or whole)

1 ¼ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ teaspoon garlic powder

1 cup bread crumbs or panko crumbs

Vegetable oil for frying
Instructions:

Prepare the onions: Peel and slice the onion into rings. Separate the rings and soak them in cold water for 10 minutes, then pat them dry.

Make the batter: In a bowl, whisk together the flour, baking powder, salt, and garlic powder. Add the egg and milk and mix until a smooth, slightly thick batter forms.

Prepare the breading: In a separate dish, combine the breadcrumbs or panko crumbs with a pinch of salt.

Coat the onion rings: Dip each onion ring first into the batter, letting excess drip off. Then, coat them thoroughly in the breadcrumb mixture, pressing gently to adhere. Tip: Use separate forks for the wet and dry ingredients to prevent clumping.

Refrigerate: Place the coated onion rings on a parchment-lined baking sheet and refrigerate for 30 minutes. This helps the coating adhere during frying.

Heat the oil: In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the onion rings: Carefully add 4-6 onion rings at a time to the hot oil to avoid overcrowding and maintain consistent oil temperature. Fry for 2-3 minutes per side, or until golden brown and crispy.

Drain and serve: Remove the fried onion rings with a slotted spoon and drain excess oil on paper towels or a wire rack. Sprinkle with additional salt if desired and serve immediately.
