Jumbo Lobster Tails with Butter 

Ingredients:

  • 4 @lobsteranywhere Jumbo Lobster Tails

  • 2 tbs butter, melted

  • 2 tbs olive oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Chives, for garnish

  • Lemon wedges

    Butter:

  • 1 stick of butter

  • 1 tsp smoky chili flakes

  • 1/2 lemon, juiced

  • 1 tbs Dijon mustard

  • 1 small shallot

  • 2 garlic cloves

  • 1 tbs parsley, chopped

  • 1 tbs chives, chopped

  • 1/2 tsp salt

  • 1/2 tsp black pepper

    Method:

    1. Preheat oven to 425 F;

    2. Remove the top shell of your lobster tails, de-vein and wash lobster tails; pat dry and brush with a mix of melted butter, olive oil, salt and pepper all over and roast for about 12 minutes or until internal temperature registers 130-135 F;

    3. To make the  butter- add 7 tbs butter to a pot and cook chopped shallot for 2 minutes, the add chopped garlic, Dijon mustard, lemon, smoky chili flakes, parsley, chives, salt and pepper;

    4. Once lobster tails have cooked- brush them generously with the cowboy butter, top with chives and enjoy!
