Pea and Parmesan Fritters

Pancakes don’t have to be sweet to be loved! These pea and Parmesan ones are the perfect breakfast or brunch idea and are super easy to make! And to those in the Northern Hemisphere and unable to fully enjoy the spring air, this is for you!

Ingredients

  • 1 egg

  • 100 ml of milk

  • 120 gr of self raising flour

  • 30 gr of freshly grated Parmesan

  • Finely grated zest of 1/2 lemon

  • 1/2 cup of shelled peas

  • Chopped herbs

  • Salt and pepper for seasoning

  • 1 tablespoon of extra virgin olive oil (plus more for frying)

  • Thick Greek Yogurt to serve.

Directions

  1. Beat egg in a bowl, add milk, flour, cheese and mix through.

  2. Add seasoning, lemon zest, oil, chopped herbs (parsley, basil, mint)and peas and combine.

  3. Heat two tablespoons on oil in a non stick pan.

  4. Drop a tablespoon of batter for each fritter (my pan is big enough to fit 3 fritters at a time).

  5. Cook for a few minutes on each side.

  6. Repeat with remaining batter.

  7. Serve with dollops of unsweetened Greek yogurt, chopped herbs and little black pepper.
