Roasted J Garlic Jumbo Shrimp with Garlic Rubbed Crostini
Ingredients:

1 lbs @lobsteranywhere 8-12 ct Black Tiger Shrimp

1 cup cherry tomatoes

3 tbs butter, melted
-
1 tsp salt
-
1/2 tsp black pepper
-
1 lemon- 1/2 sliced, 1/2 juiced + zested

1 tbs parsley, chopped
Garlic Confit:
-
1 head of garlic
-
1/3 cup olive oil
-
1/2 tsp salt
-
1/4 tsp black pepper
-
2 thyme sprigs
Garlic Rubbed Crostini:
-
1 Demi baguette
-
2 tbs olive oil
-
1/2 tsp salt
-
1/4 tsp black pepper

A garlic clove, for rubbing
Method:

Preheat oven to 350 F;

Add garlic, olive oil, salt, pepper and thyme to a small pot, cover and roasts for 40 minutes;

Preheat oven to 400 F;

Pat dry and butterfly shrimp, add it to a pan along with butter, lemon slices, lemon juice + zest, cherry tomatoes and all the garlic confit with the oil; mix well and roast for 15-20 mins (depending on size of the shrimp) and broil for 2 minutes;

To make the crostini- slice and season baguette and toast it on both sides oven medium high heat; rub with a garlic clove;
6. Once shrimp is ready soak up all these yummy juices, you may need some extra bread for dipping
