Sardines with Shallots

Ingredients:

  • 1 and 3/4 lbs (800 grams) sardines, scaled, cleaned and boned

  • 4 shallots, finely chopped

  • 1 fresh flat-leaf parsley sprig, finely chopped

  • Plain flour, for dusting

  • 1 egg

  • 6 fl oz (175 ml) extra virgin olive oil

  • 5 tablespoons white wine vinegar

  • Salt and pepper

Directions:

  1. Spread out the flour in a shallow dish.

  2. Lightly beat the egg in another shallow dish.

  3. Heat the olive oil in a large frying pan.

  4. Dip the sardines first in the flour, then in the egg and fry for about 5-6 minutes, depending on their size.

  5. Mix together the shallots, parsley and vinegar in a bowl.

  6. Season with salt and pepper.

  7. Remove the sardines with a slotted spoon and drain on kitchen paper.

  8. Place them on a warm serving dish and serve with the shallot sauce.
