Sausage Stuffed Pepper Rings

Ingredients

  •     1 green bell pepper

  •     1 red bell pepper

  •     1 yellow bell pepper

  •     1 pound of sausage, either ground or casing removed (pork or turkey – hot or mild)

  •     2 cloves Garlic, minced

  •     1 large egg

  •     1 small onion, chopped

  •     1 teaspoon of dried basil

  •     1 teaspoon of dried parsley

  •     1 teaspoon sea salt

  •     1/2 teaspoon freshly ground black pepper

  •     1 tablespoon oil, for frying

Directions

  1.     Preheat oven to 350 degrees F. Prepare an oven proof pan.

  2.     Remove core and seeds from peppers. Slice into 1 inch rings and place on nonstick baking sheet. You should get about 3 rings per pepper. In a large bowl crumble sausage then mix together, garlic, egg, onion, basil, parsley and season with salt and pepper.

  3.     Press sausage mixture evenly into pepper rings. In a skillet over medium-high heat, add oil. Sauté sausage rings on both sides until golden brown, about 5 minutes per side.

  4.     Take rings and put into your oven proof pan.

  5.  Bake for 25 minutes.
