FRESH ANCHOVIES MARINATED WITH LEMON AND OLIVE OIL

Ingredients

    • olive oil

    • salt

    • pepper

    • juice of 1 lemon

    • 6 parsley sprigs, coarsely chopped

    • 2 garlic cloves, sliced

    • 16 fresh anchovies, cleaned and butterflied (see video on how to clean and butterfly below)

Preparation

  1. Lay the anchovies on a platter skin side down

  2. Sprinkle them with lemon juice, olive oil, parsley, garlic, and salt and pepper to taste.

  3. Marinate the mixture in the refrigerator for 24 hours.
