Recipe: Broccoli di Rape Stufati (Sauteed Broccoli Rabe)


Serves: 4

  • Salt to taste

  • 1 pound broccoli rabe

  • 1 tablespoon extra virgin olive oil

  • 3 cloves garlic, sliced

  • Crushed red pepper flakes, to taste

  • Pepper to taste

  • Whole peppers, for garnish


  1. Bring a large saucepan of lightly salted water to a boil.

  2. Have a bowl of ice water standing by.

  3. Prepare broccoli rabe by trimming ends and removing any yellowed leaves.

  4. Drop in broccoli rabe and cook 4 minutes.

  5. Move broccoli rabe to ice water and cool, then drain.

  6. Can be prepared up to 1 day ahead and refrigerated.

  7. When ready to serve, in a large skillet, heat olive oil and garlic over medium heat.

  8. Cook until garlic is golden, stirring constantly, lowering heat if necessary to keep it from burning.

  9. Add broccoli rabe and a pinch of red pepper flakes.

  10. Saute over low heat 5 minutes or until broccoli rabe is warmed through and takes on flavors of garlic and pepper.

  11. Season to taste with salt and pepper.

  12. Garnish with whole peppers if desired.
