Shrimp Fra Diavolo

 

INGREDIENTS

Serves 4

  • 1 pound of medium sized shrimp peeled and deveined

  • 1/2 red bell pepper chopped

  • 1/2 green bell pepper chopped

  • 1 bunch of long green onions chopped

  • 1 carrot chopped

  • 1 stalk of celery chopped

  • 2 cloves of garlic chopped

  • 3 Tbls of extra virgin olive oil

  • 1 tbls of butter

  • 1 tsp of crushed red pepper flakes

  • 1 28oz can of diced plum tomatoes

  • 1 8oz can of tomato sauce

  • 1/2 tsp of dried oregano

  • 1/2 tsp of salt

  • 1/2 tsp of fresh ground black pepper

  • 1/4 cup of chopped parsley

  • 1 pound of penne pasta or bow tie or spaghetti

     

    PREPARATION

     

  • In a large frying pan sauté bell peppers, onions, carrots, celery and garlic in olive oil and butter for around ten minutes until tender.

  • Toss in shrimp for around 5 minutes.

  • Sprinkle in salt, pepper and red pepper flakes.

  • Add tomatoes and tomato sauce.

  • Sprinkle in the oregano.

  • Fill a large pot with around 6 quarts of water and cook pasta until al dente. Around 10 minutes.

  • Plate the pasta and pour the shrimp mixture over the penne.

     

    Sprinkle with chopped parsley and your ready to serve.
