Bacon and Tomato Hash



  • 2 slices center cut bacon, chopped

  • 1 small Roma tomato, chopped

  • Handful flat leaf parsley, chopped

  • 2 teaspoons garlic-infused oil

  • 2 teaspoons Worcestershire sauce

  • Small handful fresh flat-leaf parsley, chopped

  • Freshly ground black pepper

  • Bread for serving


  1. Heat the oil in a medium skillet.

  2. When the oil is hot, add bacon and cook until crispy.

  3.  Remove bacon with a slotted spoon and drain on a towel.

  4. Add the tomatoes to the bacon fat and oil (stand back!) and cook until warmed through.

  5. Add the Worcestershire and toss to combine.

  6. Add the bacon back to the skillet and mix with the tomato before transferring to a plate.

  7.  Serve with bread if desired
