Baked Salmon with olives and tomatoes

Ingredients
- 
salmon – 4 fillets
 - 
cherry tomatoes – 400 g- 2 cups
 - 
fresh dill – 1 bunch
 - 
capers – 2 tbsp
 - 
garlic – 1 clove
 - 
black pitted olives – 80 g – 3/8 cup
 - 
olive oil
 - 
salt and pepper
 
Instructions
- 
Wash the tomatoes and the dill. Peel and slice the garlic clove. Chop the tomatoes in half and finely chop the chives too.
 - 
Put the dill, the tomatoes, the garlic in a bowl and mix them well with a pinch of salt and a good drizzle of olive oil.
 - 
Pour some olive oil on a baking tray, add the tomatoes, lay the salmon on top and then with a spoon put some tomatoes on top of the salmon too. Scatter the olives and the capers on the fish and sprinkle with salt and pepper.
 - 
Sprinkle with olive oil and bake for 12 to 15 minutes at 180C or 350F. Serve the salmon with the baked vegetables and with a good slice of rustic bread, rice, potatoes or couscous.
