Baked Zucchini and Tomato
Ingredients

3 medium zucchini

1 container of cherry tomatoes

1 medium yellow bell pepper, seeded and chopped

1 teaspoon sea salt
-
1/2 teaspoon freshly ground black pepper

1/4 cup olive oil
-
Fresh herbs (whatever you have handy)
Directions

Preheat oven to 350 degrees F.

Cut zucchini into slices then in half.

In a casserole dish add zucchini, cherry tomatoes and yellow bell pepper.

Season with salt and pepper then drizzle with olive oil.

Bake for about 20-25 minutes. Until the zucchini is fork tender.

You can garnish with any fresh herbs you have handy.
