Baked Zucchini and Tomato


  •     3 medium zucchini

  •     1 container of cherry tomatoes

  •     1 medium yellow bell pepper, seeded and chopped

  •     1 teaspoon sea salt

  •     1/2 teaspoon freshly ground black pepper

  •     1/4 cup olive oil

  •     Fresh herbs (what ever you have handy)


  1.     Preheat oven to 350 degrees F.

  2.     Cut zucchini into slices then in half.

  3.     In a casserole dish add zucchini, cherry tomatoes and yellow bell pepper. Season with salt and pepper then drizzle with olive oil.

  4.     Bake for about 20-25 minutes. Until the zucchini is fork tender.

  5.     You can garnish with any fresh herbs you have handy.

    Note: You can sprinkle your favorite dried herbs before you bake to add extra seasoning!
