Chicken Scaloppini with Oregano


Serves 6

  • 6 skinless and boneless chicken breasts

  • 3 tablespoons flour

  • 1 tablespoon butter

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon oregano

  • 1/2 cup dry white wine

  • Salt and pepper to taste


  1. Flatten chicken breasts and dust with flour.

  2. Place the olive oil and butter in a pan over a medium heat.

  3. Add chicken.

  4. Cook for 3 minutes on each side.

  5. Sprinkle with the oregano, salt and pepper to taste.

  6. Pour in wine and cook until the wine has almost completely evaporated

  7. Transfer to a serving platter.
