Chive and Cheese Popovers


  • ½ cup chopped herbs ( chives, parsley and basil)
  • 4 eggs
  • 2 cups milk
  • 2 cups flour
  • 1 cup shredded Gruyere or Parmesan cheese
  • ½ tsp pepper
  • ¼ tsp salt
  • 6 T olive oil


  1. Beat all of the ingredients (except the cheese) together until frothy. Let sit to reach room temperature and beat again.
  2. Heat popover (or muffin tin) with 1 tsp oil in each cup at 375 until almost smoking (2 minutes).
  3. Pour in the batter and top with cheese.
  4. Close the oven door softly and let puff up and brown. (approx. 15 minutes)
