Coccoi prena
coccoi prena is the name of an incredibly tasty filled focaccia which is typical of Sardinia, where local shepherds used to take it with them when they went to pasture with their animals.
Ingredient
for 6 people:
For the dough

Flour 100g
-
fine semolina 30 gr
-
2 potatoes, boiled, peeled and crushed

baking powder
-
salt.
For the filling
-
Boiled potatoes, peeled and crushed 250g

viscidu cheese 50 gr
-
1 chopped onion
-
chopped mint
-
grated pecorino cheese 25 gr
-
olive oil 0.5 dl.
PREPARATION

On a pastry mix the flour with the semolina and mashed potatoes; add a pinch of baking powder, salt to taste and drizzle with a little warm water to do elastic and smooth dough.

With a rolling pin, flat the dough to obtain a disc rather large and with the thickness of 1 centimeter therefore, place it in a baking pan by lining the bottom and sides.

Separately, prepare the filling: In a bowl knead the mashed potatoes with cheese viscidu helping with the tines of a fork; add the chopped mint leaves and chopped onions which have previously fried in oil. Sprinkle with grated cheese and mix well. Place this filling over the dough and leveling them well, fold the edges over the filling excess leaving open the center.

Bake in preheated oven at 180 ° C and cook until golden brown.
