Cod with tomatoes and wine


Ingredients
Serves: 4
- 
3 roma tomatoes
 - 
1 tablespoon olive oil or coconut oil
 - 
1 small shallot, finely chopped (about 3 tablespoons)
 - 
2 cloves garlic, chopped
 - 
1/2 cup dry white wine
 - 
1/4 cup low sodium chicken broth
 - 
1 teaspoon sea salt
 - 
1 teaspoon freshly ground pepper
 - 
2 teaspoons dried Italian seasonings
 - 
4 (4 ounce) cod fillet
 - 
5-6 green olives, sliced
 - 
2 teaspoons capers, drained
 - 
Italian Seasoning Ingredients
 - 
2 teaspoons dried oregano
 - 
1 teaspoon dried parsley
 - 
1 teaspoon dried basil
 - 
1 teaspoon dried rosemary
 - 
1 teaspoon dried thyme leaves
 
Directions
- 
Slice each roma tomato.
 - 
Heat large sauté pan over medium heat then add olive oil.
 - 
Add in onion for 1 minute then add garlic and sauté until fragrant, about 2 minutes.
 - 
Add tomatoes; cook and stir until tomatoes begin reduce, 5-7 minutes.
 - 
Pour in wine and chicken broth; cook over medium heat until liquid reduces slightly, about 5 minutes.
 - 
Season with salt, black pepper and italian seasonings.
 - 
Place cod fillets into mixture; cover and let cook for 5 minutes.
 - 
Turn cod and cook other side until fish flakes easily with a fork, about 3 to 5 minutes.
 - 
Add in olives capers to pan 1 minute before serving.
