Cod with tomatoes and wine

 

Ingredients

Serves: 4

  •     3 roma tomatoes

  •     1 tablespoon olive oil or coconut oil

  •     1 small shallot, finely chopped (about 3 tablespoons)

  •     2 cloves garlic, chopped

  •     1/2 cup dry white wine

  •     1/4 cup low sodium chicken broth

  •     1 teaspoon sea salt

  •     1 teaspoon freshly ground pepper

  •     2 teaspoons dried Italian seasonings

  •     4 (4 ounce) cod fillet

  •     5-6 green olives, sliced

  •     2 teaspoons capers, drained

  •     Italian Seasoning Ingredients

  •     2 teaspoons dried oregano

  •     1 teaspoon dried parsley

  •     1 teaspoon dried basil

  •     1 teaspoon dried rosemary

  •     1 teaspoon dried thyme leaves

Directions

  1.     Slice each roma tomato.

  2.     Heat large sauté pan over medium heat then add olive oil.

  3. Add in onion for 1 minute then add garlic and sauté until fragrant, about 2 minutes.

  4. Add tomatoes; cook and stir until tomatoes begin reduce, 5-7 minutes.

  5. Pour in wine and chicken broth; cook over medium heat until liquid reduces slightly, about 5 minutes.

  6. Season with salt, black pepper and italian seasonings.

  7.  Place cod fillets into mixture; cover and let cook for 5 minutes.

  8. Turn cod and cook other side until fish flakes easily with a fork, about 3 to 5 minutes.

  9.  Add in olives capers to pan 1 minute before serving.
