Fracchiata

An ancient recipe: a soft polenta made from grass pea (cicerchie) and chickpea flour, and generally topped with anchovies or fried red peppers and garlic.

Ingredients

  • for 6 people:

  • Chickpea flour 250 gr

  • cicerchie flour  250 gr

  • 2 liters of water

  • coarse salt.

For the dressing

  • Fresh anchovies 200 gr

  • flour

  • fried sweet peppers (to taste)

  • olive oil (for frying).

PREPARATION

  1. Boil salted water in the pot, then pour a little at a time the two flour stirring constantly with a wooden spoon over low heat. After about 50 minutes the polenta is ready. Meanwhile clean the anchovies, removing the head and bones central, then dredge in flour and fry in olive oil. Finally flavor polenta with anchovies and serve.

  2. You can also add to the sauce in the pan fried and cut into strips peppers.
