Fried Artichoke Hearts


  • 1 (9 to 10 ounce) box frozen artichoke hearts, thawed
  • 1 egg
  • 1/3 cup grated Parmesan cheese
  • 3/4 cup dried bread crumbs
  • Olive oil or canola oil for frying
  • Salt
  • Lemon wedges and tomato sauce for dipping


  1. Pat artichoke hearts dry with paper towels.  Beat the egg in a small bowl.
  2. In another bowl, combine the cheese and bread crumbs.
  3. In a large skillet, heat 1/2 inch of oil over medium-high heat.  Dip each heart in the egg and then roll in the bread crumbs.  Add them to the hot oil, one at a time, without crowding.  Turn as necessary until golden brown, about 5 minutes.  Drain on paper towels and sprinkle with salt.  Serve with lemon wedges or tomato sauce for dipping.
