Fried Cheese Bites

  •     12 mozzarella string cheese sticks cut into bite-sized pieces
  •     1-1/2 cups Italian seasoned breadcrumbs
  •     1 cup flour
  •     2 large eggs
  •     1/4 cup milk
  •     2 cups vegetable oil for frying

For serving

  •     1 cup marinara sauce

  1.     In a medium bowl, whisk eggs and milk Set aside.
  2.     In a separate bowl, add flour. In another separate bowl, add bread crumbs.
  3.     Dip one cheese bite in flour, then into egg mixture. Shake off excess egg. Roll cheese bite around in bread crumbs, coating evenly. Repeat with remaining cheese bites. Place on a large sheet pan or plate. Dip each piece again in egg, then in breadcrumbs. Freeze until coating is set, 20-30 minutes.
  4.     In a medium skillet, heat your vegetable oil (about 2 inches high) to low heat. Line a large sheet pan or plate with paper towels.
  5.     Flick a bit of flour into the oil. If it begins to sizzle and fry golden brown, the oil is ready.
  6.     Carefully drop 5-6 pieces into oil. Make sure to separate bites, so that they don’t stick together! Watch closely, flipping once. Fry until golden brown, about 30 seconds.
  7.     Using a slotted spoon, remove bites from oil and place on paper towels. Repeat with remaining bites.
  8.     Serve immediately with warm marinara sauce, if desired.
