Italian Cookies called Brutti ma Buoni (Ugly but Good)

I love cookies even for breakfast and this simple and easy to follow recipe brought to us by VideoCulinary.com is truly a good one.

With Hazelnuts this recipe makes for some really delicious cookies. The name pretty much says it all – Brutti ma Buoni means Ugly but Good and they are definitely both. We would ask that if you try this recipe message us and let us know how you made out.

Ingredients

  •     Egg whites – 4

  •     Sugar – 300 grams (10.5 oz)

  •     Vanilla sugar – 10 grams (2 teaspoons)

  •     Salt – a pinch

  •     Nuts (hazelnuts or almonds) – 350 grams (12 oz)

Directions

  1. Preheat oven to 150°C (300°F)

  2. Place almonds or hazelnuts on a sheet tray and bake in a preheated oven for 5 minutes. Remove from the oven and cool completely.

  3. Chop half of the nuts, and grind the other half into fine powder.

  4. 4 egg whites in a bowl of an electric mixer fitted with the whip attachment. add a pinch of salt and whip on medium speed until soft peaks form. Increase to high speed and gradually add sugar and of vanilla sugar.

  5. Fold the nuts into the meringue.

  6. Place two spoons per scoop evenly spaced cookies of the same size onto a parchment paper lined sheet tray.

  7. Bake at 150°C (300°F) for 30 minutes.

  8. Remove from the oven, cool and serve with tea or coffee.
