Italian Green Bean and Potato Salad

Ingredients

Serves: about 4

  1. 1 lb. Fresh Green Beans

  2. 2 Large Yukon Gold Potatoes ( skins on or off)

  3. 1/2 Medium Red Onion sliced thinly

  4. Extra Virgin Olive Oil

  5. Juice of a fresh Lemon

  6. Salt and Pepper to taste

  7. Chopped Fresh Parsley for garnish

OPTION: Try adding some crumbled Blue Cheese or Gorgonzola – WOW!

Directions

  • Cook your green beans and potatoes – and cool.

  • Cut potatoes in chunky larger pieces – not small.

  • Mix beans, potatoes, and onion gently together.

  • Drizzle with Extra Virgin Olive Oil – use your best for this!

  • Squeeze on the fresh lemon juice and sprinkle with salt and pepper to taste.

  • Top with parsley. (Add the crumbled cheese if using)
