Italian Green Bean and Potato Salad
Ingredients
Serves: about 4

1 lb. Fresh Green Beans

2 Large Yukon Gold Potatoes ( skins on or off)

1/2 Medium Red Onion sliced thinly
-
Extra Virgin Olive Oil
-
Juice of a fresh Lemon
-
Salt and Pepper to taste
-
Chopped Fresh Parsley for garnish
OPTION: Try adding some crumbled Blue Cheese or Gorgonzola – WOW!
Directions

Cook your green beans and potatoes – and cool.

Cut potatoes in chunky larger pieces – not small.

Mix beans, potatoes, and onion gently together.

Drizzle with Extra Virgin Olive Oil – use your best for this!

Squeeze on the fresh lemon juice and sprinkle with salt and pepper to taste.

Top with parsley. (Add the crumbled cheese if using)
