Mushroom Salad


  • 4 cups button mushrooms

  • ½ cup chopped peppers

  • ½ tsp each salt and pepper

  • 1 tsp chopped rosemary

  • 1 lemon (scorched and quartered)

  • ⅓ cup olive oil


  1. Bring mushrooms to the boil in salted water.

  2. Remove and immerse in ice water.

  3. Add in remaining ingredients and let sit at room temperature for a minimum of 30 minutes.

  4. Adjust salt to personal taste.
