Panteschi Kisses

A Kiss is a typical sweet pastry from Pantelleria Island, two deliciously thick and crispy waffles

wafers sandwich a filling of ricotta, chocolate chips and cinnamon, topped with a dusting of icing sugar.


for 4-6 people:

For the waffles

  • Flour 250g

  • 2 eggs

  • 2 tablespoons of granulated sugar

  • milk 3 dl

  • salt.

For the filling

  • ricotta cheese 500g

  • dark chocolate cut into slivers 50 g

  • icing sugar.

  • extra virgin olive oil (for frying).


  1. In a bowl, whip the egg yolks with 2 tablespoons of granulated sugar then add the flour, milk and egg whites that have previously whip finally with a pinch of salt.

  2. Separately, in another bowl, mix the ricotta previously sifted together with the remaining sugar and chocolate.

  3. Heat plenty of oil in a frying high pan, then immerse the waffle iron fully prepared with batter and let the batter until golden brown and begin to fall off. Now let dry waffles on a sheet of absorbent paper and fill them paired with the prepared ricotta cream. Sprinkle with icing sugar and serve.
