PASTA WITH SHRIMP AND SWISS CHARD OR SPINACH

PASTA WITH SHRIMP AND GREENS

 

Ingredients

Serves: 2

  1. 8 oz. Spaghetti, Cappellini etc. prepared according to package directions – or pasta fresca!

  2. 1 Bunch Fresh Swiss Chard – Rainbow is nice! (you can also use spinach if you like)

  3. 1/3 Cup Olive Oil

  4. 2 Cloves fresh garlic chopped finely

  5. 1/2-2/3 Cup Sundried Tomatoes – chopped

  6. 1/4 Tsp. Red Pepper Flakes

  7. 2 Tbsp. Fresh Basil chopped

  8. 1 lb. Large Shrimp, cleaned and shelled

  9. 1/2 C. Dry White Wine

  10. Salt and Pepper to taste

Instructions

  1. Rinse your Swiss Chard and chop coarsely. Drop into a pot of boiling lightly salted water and cook for about 6 minutes. Drain well. Set aside.

  2. In a pan, saute the garlic and sundried tomatoes for about 2 minutes over medium heat. Do not burn the garlic!

  3. Add the shrimp, red pepper, basil, and Swiss Chard. Then add the wine.

  4. Toss in the pan and cook  over medium-medium high until the shrimp is just opaque – about 3-4 minutes – no more!

  5. Add salt and pepper to taste and stir.

  6. Pour over your cooked pasta
