Peas, Onions, and Prosciutto (Piselli, Cipolle e Prosciutto) Recipe

2 cups frozen or fresh peas

1 small onion

1 tablespoon olive oil

4 thin slices Prosciutto di Parma

pinch salt and pepper
Cooking Directions

Slice onion thinly and tear Prosciutto di Parma into thin pieces

Heat olive oil in pan for 2-3 minutes at medium-high heat

Add onions and cook for 5 minutes or until onions caramelize into the oil

Once onions have caramelized, add peas, salt, and pepper. Stir gently for a few minutes and cover pan for 10 minutes (if using frozen peas, allow an extra 5 minutes to cook)

Uncover pan and add proscuitto and gently stir, then cover pan again

Let cook for another 5 minutes, stir gently, then remove from pan and serve
