Peas, Onions, and Prosciutto (Piselli, Cipolle e Prosciutto) Recipe

Yield: 4 servings

  •     2 cups frozen or fresh peas

  •     1 small onion

  •     1 tablespoon olive oil

  •     4 thin slices Prosciutto di Parma

  •     pinch salt and pepper

Cooking Directions

  1.     Slice onion thinly and tear Prosciutto di Parma into thin pieces

  2.     Heat olive oil in pan for 2-3 minutes at medium-high heat

  3.     Add onions and cook for 5 minutes or until onions caramelize into the oil

  4.     Once onions have caramelized, add peas, salt, and pepper. Stir gently for a few minutes and cover pan for 10 minutes (if using frozen peas, allow an extra 5 minutes to cook)

  5.     Uncover pan and add proscuitto and gently stir, then cover pan again

  6.     Let cook for another 5 minutes, stir gently, then remove from pan and serve
