Potato Pie

Ingredients:

  • 8 large Idaho potatoes

  • 3 eggs

  • Salt to taste

  • 3 tablespoons butter, melted

  • 3 tablespoons extra virgin olive oil

  • 1/3 cup freshly grated Parmigiano cheese

  • 2 tablespoons all-purpose flour

  • 1 egg yolk, lightly beaten

Directions:

  1. Preheat oven to 350°F (175°C).

  2. Butter an 8-inch round cake pan with a removable bottom.

  3. Fill a large saucepan two-thirds full with water.

  4. Add potatoes.

  5. Bring to a boil.

  6. Boil gently until potatoes are tender.

  7. Peel and mash potatoes while hot.

  8. Beat 3 eggs with salt in a large bowl.

  9. Beat in melted butter and olive oil.

  10. Add mashed potatoes, Parmigiano cheese and flour; mix well.

  11. Put potato mixture into buttered pan and smooth top with a spatula.

  12. Brush top with beaten egg yolk.

  13. Bake 20 to 25 minutes or until top is golden.

  14. Unmold potato cake and place on a warm platter.

  15. Serve immediately. Makes 6 to 8 servings.
