SPAGHETTI WITH LEMON, GARLIC AND SPINACH

Ingredients

  • 3/4 lb. spaghetti – cooked according to instructions
  • 4 tbsp olive oil
  • 6 cloves of garlic cut in slivers
  • 4 tbsp capers
  • 1  tsp.dried red chile flakes
  • 4 tbsp  lemon zest
  •  3 tbsp lemon juice
  • 4 cups chopped spinach (I used a lot more!)
  • Pinch of salt
  • 1/2 cup freshly grated Parmesan
  • Fresh ground pepper

Directions

  1. Cook spaghetti. cooked according to instructions
  2. Heat oil in large skillet over medium heat.
  3. Add garlic, capers and chile flakes and cook for two minutes – stirring.
  4. Add lemon juice and lemon zest and cook for an additional two minutes.
  5. Drain pasta.
  6. Add pasta, spinach and salt to skillet.
  7.  Toss well.
  8. Add the Parmesan and ground pepper to taste
