Tasty whitebait fritters prepared in the tradition of Liguria. Excellent appetizer for a dinner of seafood.
for 6 people:
Whitebait 1 kg
3 glasses of sparkling mineral water
3 tablespoons of extra virgin olive oil
1 tablespoon of chopped parsley
olive oil along with sunflower oil (for frying)
In a bowl, pour the mineral water then add the flour, olive oil and a pinch of salt and mix well then let stand for at least 2 hours.
Clean up the whitebait then add them to the batter and mix well with the chopped parsley.
In a large skillet put to heat a plenty of olive oil and sunflower oil and when hot (not hot piping) pour the mixture in spoonfuls, little by little and fry the fritters until will be golden on the entire surface.
