Grilled Marinated Shrimp Wrapped in Speck

Looking for an easy appetizer that will have people raving?  We’ve got just the thing.

Grilled shrimp marinated in garlic and fresh herbs, on a stick… wrapped in bacon.

Yep, that’ll do it.

Here’s What You’ll Need:

  • 12- large shrimp, peeled and deveined tail off

  • 2 cloves of garlic, minced

  • 1 tsp fresh rosemary, chopped

  • 1 tbsp extra virgin olive oil

  • 1 tsp salt

  • 1\2 tsp black pepper

  • 6 thin slices of Speck, cut in half lenthwise

  • 12 bamboo skewers- soaked in water

Get Cookin! 

  1. Combine all ingredients except the speck and skewers to marinate the shrimp.

  2. Let stand for an hour or so refrigerated.

  3. Skewer each shrimp starting from the tail end to the head, not exposing the tip of the skewer. Shrimp should be straight. Grill each skewer for 45 seconds on each side.

  4. Remove from grill, cool slightly.

  5. Wrap each shrimp with the long strips of speck.

  6. Before serving, cook in a 375 degree oven for 5-7 minutes.
