Asparagus Omelette


for 6 people:

  • 900 g. of  asparagus
  • 6 eggs
  • 70 g. of grated parmesan cheese
  • 40 g. of butter
  • 2 dl. of cream
  • parsley
  • 1 pinch of nutmeg
  • oil, salt, pepper


  1. Wash the asparagus and boil in salted water, when they are cooked, drain them and place them in a dish.
  2. In a bowl, beat eggs, add a pinch of salt, grated Parmesan cheese, nutmeg, chopped parsley, cream and the asparagus tips and mix all ingredients well.
  3. Put on the fire a pan with a little ‘oil and butter, when oil and butter will be very hot, pour in the mixture of the omelette and cook over high heat until the omelet will be formed and will be well cooked on both sides. Spill it to make sure that the cooking is uniform.
  4. It should be served hot.
