Basil Mozzarella Scramble


  • 4 large eggs

  • 4 thick slices artisan bread or similar

  • 4 slices fresh mozzarella cheese

  • 1/2 cup freshly grated parmesan cheese

  • 1/2 small onion, finely chopped

  • 1/2 cup cherry tomatoes, cut in half

  • 2 tablespoons fresh basil

  • 2 tablespoons Italian parsley

  • 4 tablespoons water

  • 1 teaspoon butter


  1. In a large frying pan, coat the bottom with 1 teaspoon of butter on medium heat to melt.

  2. When the pan is hot, add onions and cook until soft.

  3. In a small mixing bowl, whisk eggs briskly with water.

  4. Add tomatoes, fresh herbs and parmesan cheese.

  5. Season with salt and black pepper and pour into the pan.

  6. Scramble for 2-3 minutes or until cooked.

  7. Toast or grill fresh bread (butter optional).

  8. Arrange on a serving platter (refer to picture) and enjoy.
