Capellini with Grilled Chicken and Tomatoes
Ingredients:
Makes 6 servings.

1 lb angel hair pasta

1 and 1/2 lb grape tomatoes, halved

3/4 cup chopped fresh basil

4 tablespoons capers, drained and rinsed

2 tablespoons fresh oregano, chopped

1/2 cup extra virgin olive oil

1/2 cup grated Parmigiano cheese

1 lb grilled boneless chicken breast, cut into bite-sized pieces

Salt and freshly ground pepper, to taste
Directions:

Cook the pasta according to package instructions ‘al dente’, then drain and rinse under cold water.

Combine the pasta with the rest of the ingredients in a large serving bowl and gently toss.
