Capellini with Grilled Chicken and Tomatoes


Makes 6 servings.

  • 1 lb angel hair pasta

  • 1 and 1/2 lb grape tomatoes, halved

  • 3/4 cup chopped fresh basil

  • 4 tablespoons capers, drained and rinsed

  • 2 tablespoons fresh oregano, chopped

  • 1/2 cup extra virgin olive oil

  • 1/2 cup grated Parmigiano cheese

  • 1 lb grilled boneless chicken breast, cut into bite-sized pieces

  • Salt and freshly ground pepper, to taste


  1. Cook the pasta according to package instructions ‘al dente’, then drain and rinse under cold water.

  2. Combine the pasta with the rest of the ingredients in a large serving bowl and gently toss.
