Chicken Potenza


for 4 people:

  • 1 chicken

  • tomatoes 750g

  • 1 onion

  • 1 hot pepper

  • parsley

  • basil

  • 1 glass of dry white wine

  • olive oil

  • 1 tablespoon of lard

  • salt.


  1. Cut the chicken into pieces and put it to fry in olive oil and in lard, add the thinly sliced onion then, when it becomes golden, add the minced chili pepper and the white wine.

  2. When they spent about 15 minutes, add the tomatoes that you have seeded and coarsely diced, basil and parsley finely chopped. Season with salt and cook adding a little hot water if necessary.

  3. Serve warm.
