Christmas nociata

This sweet treat is a Christmas recipe from Lazio (Latium) region of Italy.

A treat made from walnuts and honey.

Ingredients for 400 grams of nociata:

  • Honey 200 gr

  • walnuts, coarsely chopped 150 g

  • 2 egg whites

  • ½ lemon

  • Bay leaves

  • pepper


  1. Beat the egg whites then pour into a pan along with honey and a pinch of pepper then, place the pan on the stove over a low heat and stir long.

  2. When the dough will be quite substantial, add the walnuts and stir to mix well.

  3. On a work surface, place a layer of bay leaves then pour over the mixture of honey and nuts and, level well , sprinkling occasionally with lemon juice.

  4. Finally cover the nociata with another layer of bay leaves, let it cool and cut into pieces.
