Christmas Potatoes donuts From Puglia

So sweet and so good these potatoes donuts From Puglia; along with other sweet specialties, enrich and smell the long Christmas tables!

Ingredients for 4-6 people:

  • Boiled and peeled potatoes 500 gr

  • flour 400g

  • 3 eggs

  • 1 packet of baking powder

  • zest of 1 lemon, grated

  • olive oil (for frying)

  • sugar (for sprinkling).


  1. Boil the potatoes in boiling water for 40 minutes then check the cooking and, if they are sufficiently soft, remove from heat and peel them, mash them with a potato masher and pour on a pastry board. Add the flour, previously beaten eggs, baking powder and grated lemon peel.

  2. Knead long until mixture is smooth then, take a few pieces of dough and stretch them with your hands to form cylinders of about 20 centimeters long.

  3. Intersect the ends of the cylinders of dough and fry the donuts in plenty of olive oil.

  4. When they are golden on the entire surface, drain well and cover them entirely of sugar.

  5. Serve cold.
