Eggs with mozzarella
Ingredients For 4 people:
4 eggs
mozzarella (or provatura) 100 gr
2 tablespoons grated Parmesan cheese
3 tablespoons extra virgin olive oil
salt, pepper.
PREPARATION
Diced mozzarella and place in a dish.
In a pan, place the oil and turn it into heat without boiling, then add the cheese without letting it melt. Rompetevi over 4 eggs, salt and pepper and continue to cook for about 5 minutes.
Sprinkle cooked to order with grated cheese and serve hot.
