Fresh Strawberry Muffins
Ingredients
Makes one dozen muffins.

1/2 cup butter, softened

3/4 cup white sugar

1 egg
-
2 cups flour

2 tsp baking powder

1/2 tsp salt

1/2 cup milk
-
1/2 tsp vanilla
-
1 1/2 cups chopped strawberries
Topping
-
3 tsp white sugar
-
1/2 tsp cinnamon
Instructions

Combine the 3 teaspoons of sugar and 1/2 teaspoon of cinnamon to make the topping.

Cream butter and sugar. Add egg and mix well.

Sift flour, baking powder and salt in a small bowl. Combine milk and vanilla. Add flour mixture and milk mixture alternately to butter/sugar/egg mixture. Gently stir in strawberries.

Spoon batter into muffin pans. Sprinkle topping over muffins.

Bake at 400ºF for 20-25 minutes.
