Fresh Strawberry Muffins


Makes one dozen muffins.

  • 1/2 cup butter, softened

  • 3/4 cup white sugar

  • 1 egg

  • 2 cups flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup milk

  • 1/2 tsp vanilla

  • 1 1/2 cups chopped strawberries


  • 3 tsp white sugar

  • 1/2 tsp cinnamon


  1. Combine the 3 teaspoons of sugar and 1/2 teaspoon of cinnamon to make the topping.

  2. Cream butter and sugar. Add egg and mix well.

  3. Sift flour, baking powder and salt in a small bowl. Combine milk and vanilla. Add flour mixture and milk mixture alternately to butter/sugar/egg mixture. Gently stir in strawberries.

  4. Spoon batter into muffin pans. Sprinkle topping over muffins.

  5. Bake at 400ºF for 20-25 minutes.
